Inside Scoop: Anodized aluminum is harder, more durable, and less likely to corrode versus regular aluminum. Anodized aluminum is much less reactive than non-anodized aluminum. By anodizing aluminum, the anodizing process increases the thickness of the oxide layer (e.g.: it makes it thicker so it does not leach like non-anodized aluminum.). Anodized aluminum is used in cookware most often because it is excellent at conducting heat quickly and evenly. To remove any aluminum leaching issues manufacturers will either anodize it (i.e.: the Dr. Weil Rice Cooker), or wrap the aluminum in stainless steel or copper (i.e.: All Clad cookware). Dr. Weil's rice cooker's inner pot has been anodized.

Dr. Weil writes, "I have spent a great deal of time in Asia, and have found that even the humblest homes there tend to have automatic rice cookers in a place of honor in the kitchen. It is a practice the western world would do well to emulate. Rice, especially brown rice, is a marvelously healthy food. Because the grains are large and intact, the body metabolizes rice slowly, preventing blood sugar "spikes" that are followed by "lows." The result is a steady, productive energy that propels you through the day. Brown rice is also rich in B vitamins, fiber and the essential minerals manganese and selenium. But one need not use a "rice cooker" only for rice. The health advantage of cooked, whole grains extends across many species. Quinoa, millet, kasha, bulgur and other grains can be prepared in this cooker, as can small legumes such as lentils. Getting most of your carbohydrates from true, slow-digesting, whole grains – as opposed to grains that have been pulverized into flour – is one of the best nutritional decisions you can make. Naturally, rice and other grains can be cooked on a stovetop, but the great advantage of an automatic rice cooker is that one can fill it, turn it on and forget it – the grain is cooked perfectly, then the heat automatically lowers to keep it warm for hours."
