"I had terrific results with both plain rice and Mexican-style red rice in a large VitaClay we borrowed for testing. (For the red rice, I sauteed the rice and onion in a skillet on the stove first.) The rice was fluffy and perfectly cooked, not soggy or dry, with a pleasant, natural flavor - better tasting, in fact, than in the rice cooker I usually use. Beef stew, as promised, cooked about twice as fast as in a traditional slow cooker set to "high." Cooking in the VitaClay Slow Cooker is as close as you can get for flavorful stews with optimal results, just like traditional clay cooking pots that are used all over the world! In winter, people will really enjoy those long-simmering stews, soups and bean dishes that warm the kitchen and scent the air with heartwarming aromas. Personally, I will eat these earthy soups and stews almost all year long. In Belgium where I grew up, you traditionally start a meal with a soup. It still is the season to take advantage of the comforting warmth slow cooked meals radiates both your stomach and your kitchen.

Moroccans use the tagine with its conical lid; the Spanish a lidless cazuela; in Provence, the shallow open dish called a tian. In China and the rest of Asia, people have been cooking and still cook, with clay pots, since ancient civilization.

Cooking in wet terra cotta clay pots is an ancient tradition that dates back to the Etruscans. Because of the characteristics of the moist heat of clay pot cooking, excessive amounts of seasonings or fat aren't needed in order to achieve flavorful results. In essence 'no fat' is needed, since the clay cooker cooks with a minimum of liquid and retains all the intense flavors of every ingredient, achieved by simmering in their own juices. More of the essential nutrients and vitamins are retained in foods cooked in clay pots because food cooks in a closed environment with limited liquids.

Meats cook especially well in clay cookers with the tendency to stay moist and juicy. What I like most is that the clay cooker is one dish; you only use one pot for the whole meal. Great for busy people! A limit amount of preparation time is needed to prepare a dish. Once the ingredients are put into the clay pot, you can leave the house, while VitaClay does the work.

Many studies have been carried out which have shown that what we eat can affect our health. It is possible that by eating certain protective foods, we may be able to reduce our risk of developing diseases such as cancer or heart disease. I included several Mediterranean dishes because it is proven that the Mediterranean diet contains many of the foods, which have been shown to have these protective properties. I also added a little Health Note for your reference with every recipe. Suzanne Vandyck is a culinary instructor, who teaches yearly at the renowned Cordon Bleu institute in Florence (Italy), the heart of Tuscany. Born in Belgium (Europe's best-kept culinary secret), Suzanne Vandyck inherited her love for cooking from her mother and a country where cooking rituals is a feast every day. VitaClay Rice Cooking Instructions

The Rice Cooking Key cycles between the "Regular rice", "Brown rice", "Sticky rice", and "Reheat rice" options. Each has a different micro computerized cooking mode. You do not need to select a time for the rice; the cooker will determine the cook-time automatically based on the type of rice.

  • Rinse rice with different container

  • Load cleaned rice into the clay pot, and fill the cooker with water to the level of your own preferences. Level the rice in the clay pot so that it is even. Cover with the supplied clay lid. Close Coverlid.

  • Make sure you plug the power cord into the unit first, before plugging the power cord into the AC wall outlet.

  • Place the clay pot with loaded rice into the cooker's heating plate, and turn the clay pot so that it has good contact with the bottom heating plate. Be sure there is no particle interference so that the cooker will cook evenly.

  • Snap to close the coverlid. You will hear a "click" when the coverlid is snapped in.

  • Press "Rice Cooking" key to select any of these choices: "Regular rice", "Brown rice", "Sticky or Sweet rice", or "Reheat rice". It will start the cook mode within a few seconds with a sound of "beep" and the cooking indicator light will turn on.

  • A few minutes before cooking is done, it will automatically switch to "Keep Warm" state with a sound of "beep". Once cooker enters "Warm" mode, rice is ready to serve.

  • Cooking times depend on the type of rice, the amount of rice and the amount of water used. One cup of white rice with 1.5-2 cups of water will take less time to cook than one cup of brown rice and 2.5 cups of water, but will take less time than 5 cups of rice and 10-12 cups of water (water amount depending on the type of rice used; brown rice taking more water than white rice).

To program rice cooking at a specified time:

  • Use steps above but instead of choosing the type of rice, press the "Preset" timer key.

  • Select "Hour" and "Minutes" keys.

  • Then select "Rice Cooking" key to the type of rice you are cooking (white, brown, sticky, etc.). Within a few seconds, the LCD will display the time you pre-programmed, he cooker will wait until the preset time to begin coking. When it starts cooking, you will hear a sound of "beep" and the cooking indicator light will turn on

VitaClay Rice Cooker Brown Rice & Quick Serving Tips

The difference between brown rice and white rice is not just color! A while grain of rice has several layers. Only the outermost layer, the hull, is removed to produce what we call brown rice. This process is the least damaging to the nutritional value of the rice and avoids the unnecessary loss of nutrients that occurs with further processing

One cup of raw brown rice makes about 2.5 cups of cooked rice. It requires at least 2-2.5 cups of water per cup of rice (more water can be added upon personal preferences). Here are simple directions to perfect brown rice:

  • First, rinse your rice well -- at least three times -- with cold water. Stir it with your hand in a circular direction. Next, place into provided VitaClay pot.

  • Follow steps on how to cook rice in the VitaClay written above

  • NOTE: To achieve the best cooking result, after the beep sound is heard, let brown rice or multi-grains stay in "WARM" (Warm/Cancel button will light on) for additional 30 minutes or longer before serving.

  • A nice variation is to cook your rice in mushroom or vegetable stock, leftover vegetable-steaming water, or with your favorite herbs. Or add color and a healthy spice to your rice and turn your rice bright yellow by adding a teaspoon of turmeric. Turmeric is a really healthy spice, one that helps relieve arthritis, tendonitis, bursitis since it acts as an antioxidant and anti-inflammatory agent.

  • Other delicious additions to rice are cashew nuts, cranberries, raisins, apple chunks, mango cubes, mushrooms, garlic, and onions. Sauté these ingredients in olive oil and mix into the prepared rice. Cooking the rice in mushroom stock and then mixing it with mushrooms makes a flavorful dish that is irresistible. Brown rice is quite flexible. Experiment with your rice additions. You really cannot go wrong.
